We know what it is like when moving home, the struggle of trying to avoid doing a food shop. Trying to get through all the food in the freezer and cupboards so there is less to move. We also know how stressful life can be before moving into your new property, we have created two easy comfort food recipes to try. They aim to use the food left in your cupboards, so there is less to take with you or throw away.

Mac & Cheese

Mac and cheese pasta is a basic recipe that can use up dried pasta, cheese, butter, milk, and flour left in cupboards. Plus, this super comfort food always goes down great for the entire family and can be customized for your tastebuds.

Ingredients

  • 1 Tablespoon of vegetable/olive oil (whatever oil you have)
  • 2 tablespoons of butter
  • 3 tablespoons of flour
  • 250ml of milk
  • 150g of grated cheddar cheese
  • Dried pasta – Any shape will work
  • Seasoning to your taste (optional)

Boil the pasta in a separate pan. Add all the ingredients excluding the cheese into a saucepan and cook for 20 minutes on medium heat whisking continuously to avoid lumps in the sauce. Once the sauce thickens turn off the heat, add the boiled pasta, and half the cheese, then mix. Pop the pasta in an oven-proof dish, top with the remaining cheese, and bake for 15 minutes. Serve alone or with a side of broccoli.

You can switch this recipe up by adding any ingredients and seasonings you’d like.  

For example:

  • Add some chili flakes and jalapenos for a spicy mac and cheese.
  • Add boiled broccoli florets to the pasta before baking for a cheesy broccoli macaroni.
  • Add sausage or chorizo for a bit of protein to the pasta.

Corned Beef Hash

There is no greater comfort food than meat and potatoes, especially when paired with baked beans (how English of us). Corned beef hash is a great way to use up the extra tins in the cupboards and the extra potatoes in the fridge. If you are not a lover of corned beef or you don’t eat meat, this can be easily swapped out for any protein halloumi, chili beans, tuna, chickpeas, and sausages are all great replacements for this recipe.

Ingredients

  • 500g of potatoes pleaded and chopped into small cubes.
  • 1 Tin of baked beans
  • 1 chopped onion
  • 340g of corned beef chopped into cubes (or any other protein you have or prefer).
  • 2 tablespoons of Worcester sauce
  • 2 Tablespoons of vegetable or olive oil
  • Seasoning to personal taste (optional)

Boil the potatoes in water until soft and then drain. Add the oil and the onion to the frying pan on medium heat for around 3 minutes. Then add the corned beef (or substitute) and potatoes into the pan and push down using a spatula to crisp the dish up. Cook for 5 minutes before turning the dish around (try to avoid breaking), add Worcester sauce, and cook for a further 5 minutes. Serve with the baked beans for the perfect comfort meal.
